(OUTview AMERICA) EXCLUSIVE: The Kosher Baker Previews Hanukkah Favorites in her New Cookbook!

by MK Scott

Too often, Jewish recipes have too much salt, fat, sugar, and processed foods and lack whole grains and fresh ingredients. But now Paula Shoyer, THE kosher food expert and best-selling author has released her newest cookbook: The Healthy Jewish Kitchen: Fresh Contemporary Recipes for Every Occasion, a delicious new take on Jewish cooking.

In each of Paula’s recipes she uses only natural ingredients and offers a fresh, nutrient-dense spin on every dish. Here you’ll find very little frying, and no margarine, frozen puff pastry, soup stocks and powders, and most jarred sauces. More than 80 recipes include both Sephardic and Ashkenazy Jewish classics (Israeli Herb and Almond Salad, Sourdough Challah, Tzimmes Puree, Potato and Scallion Latkes, Schnitzel with Nut Crust) as well as American and international dishes that extend beyond the Jewish culinary world.

With Hanukkah coming up next week,  the timing couldn't better to order this book as a gift or cook up a storm this holiday season. I had a chance to chat with Paula Shoyer by e-mail.

(COOKING w/ DRAG QUEENS) Madison Hinton - Meaty Turkey Spaghetti!

We always recommend eating grass fed beef, mostly because it's rich in healthy fats and low in fats associated with disease.

But a lot of folks can't find, or afford the cost of eating grass fed beef, and so we look for healthy affordable alternatives, like this sexy, meaty turkey, beef and sausage spaghetti recipe brought to us by Madison Hinton, our gal pal from Atlanta, Georgia.

(Cooking w/ Drag Queens) - Teri Yaki!

For weddings, New Year’s Eve or any special event, Marc and I love to make cream puffs.

Whenever we bring them to parties, people can't accept that we made them ourselves. Maybe it’s because they appear created by the gods, when in reality they are so easy, any mortal can make them with the simplest ingredients.

Inspired by dreamsicles, Our favorite way to make them fills these light, eggy puffs with vanilla orange pastry cream.

Calling someone a cream puff can be slang for saying they are weak, but if you knew what cream puffs have to go through to become cream puffs, you wouldn’t call them weak at all.

These little gems go through the fire not just once, but twice: First the dough is cooked on the stovetop then it’s baked in the oven before getting stuffed with a creamy filling.

Joining us today is a drag queen who is no cream puff herself--Teri Yaki. Born the son of a preacher man in Detroit Michigan, Teri Yaki is now one of Chicago’s most loved and raunchiest comedy queens.

(Cooking w/ Drag Queens) - Lola Von Miramar!

One of my favorite dishes from my home of Puerto Rico is arroz con pollo, or in English, rice with chicken. Growing up in San Juan, we this dish all the time, but especially on special occasions like birthdays and holidays when you had to feed a lot of people.

Joining us today is our Puerto Rican gal pal Lola Von Miramar, who out of drag as Larry La Fountain teaches queer Latino studies at the University of Michigan in Ann Arbor.

(Cooking w/ Drag Queens) - Darienne Lake!

One of the most fascinating and controversial cooking videos we’ve ever seen is Paula Deen’s Ladies Brunch Burger, a diabolical combination of eggs and bacon on top of a burger, with two sugary glazed donuts as buns.

Now, Paula Deen claims the donut, egg and bacon burger creation is her own, but
southern folks have long enjoyed gobbling up what they call a Luther Burger, a bacon cheeseburger with a donut for a bun, named after the late closeted gay musician Luther Vandross.

Paula describes the donut burger as one serving per lifetime, but if you examine the calories and nutrition behind the burger, it’s no worse than what most Americans eat on a regular basis. I wouldn’t eat it every day, but I wouldn’t recommend eating burgers every day either.

The Ladies Brunch burger and Paula’s gigantic lasanga sandwich came at a time during her career where Paula a lot of flack for her love of southern decadent food.

#unaPAULAgetic, diabetic, bitch

The video inspired hundreds of parodies and psychedelic remixes where Paula and her friend gobble up the burger with sounds of lions roaring in the background.

Joining us to make this devilishly decadent sandwich is Darienne Lake, from RuPauls’ Drag Race Season 6. Ever since I saw her flawless impersonation of Paula Deen on TV, I had fever dreams of us making this legendary donut burger together.

(Cooking w/ Drag Queens) - Trannika Rex!

From seasoning, to breading, to the way it’s fried- everyone seems to have strong feelings when it comes to fried chicken.

In the realm of legend is Colonel Sander’s secret blend of 11 herbs and spices, which Kentucky Fried Chicken claims is still the same recipe they use to this day.

The Colonel’s recipe is one of the most guarded secrets right up with with what's in Coca Cola or how to get a drag queen to a gig on time. But thanks to culinary sleuths on the Internet we may very well have figured it out.

Today we’re making fabulous fried chicken with some tasty twists on classic dipping sauces.

(Cooking w/ Drag Queens) - Shea Coulee!

We’re addicted to salsa verde. This green, garlicky Mexican sauce gets its green color not from green tomatoes, but from tomatillos, a green tangy fruit that’s closely related to cape gooseberries.

Now, tomatoes are in the same family as tomatillos, but a different genus.

You can put it with almost anything - it’s great with guacamole, on tacos, even in your eggs in the morning! You literally can eat green eggs and ham, and love it.

Today we are going to make Pork Enchiladas with Salsa Verde!

Joining us today is Shea Coulee-- a queen from Chicago who recently exploded on the scene, Shea is well known for taking odds and ends and turning it into high couture. Like Alaska, she finds trash and literally turns it into treasure.

(Cooking w/ Drag Queens) - Kim Chi!

There’s something magical about Korean pickled vegetables. Those salty, savory delicacies are not only delicious, but really good for you and your tummy. One of the most fabulous dishes from Korea is we adore is Bi Bim Bap, which literally translates to "mixed rice."

Many Korean folks think of Bi Bim Bap or bibim-bop as a way of cleaning out the fridge, using up day-old rice and leftovers. we think of it as a rainbow of colors and textures that just spoons itself into your mouth.

Joining to make this tasty bowl of rainbow wonder is OUR secret Asian queen, Kim Chi, one of the most talked about drag queens who despite there being a lot of rumors to be on RuPaul’s Drag Race, has still yet to make it on the show.

(MK's PIC(k) of the Week) Food Dude, Dan Churchill on DudeFood!

From the breakout star of MasterChef Australia, Dan Churchill’s DudeFood, a cookbook that will educate, motivate, and inspire men to put on an apron and turn on the oven.

Attention, dudes: you no longer have an excuse to avoid the kitchen. Dan Churchill, 25, has written a cookbook for guys who have always wanted to cook, but don’t know where to start; boyfriends who are initimidated by a frying pan; and sons who have too long relied on their parents for meals. These mouth-watering recipes are easy to read and, most important, easy to replicate.

When Churchill was twelve, he put on an apron and agreed to take his turn cooking dinner for his family. Now in his twenties, Churchill draws on his self-taught experience in the kitchen, along with his extensive knowledge of nutrition, to create simple, delicious, and healthy meals. Divided into sections based on everyday scenarios and featuring forty-five recipes, DudeFood shares the secrets to cooking a repertoire of eggs, seafood, poultry, meats, vegetables, sandwiches, and even desserts. If it’s Sunday afternoon and you’re preparing for another long workweek: save time and money with Churchill’s slow roasted beef, a hearty meal you can enjoy that same evening, but also slice up for lunch tomorrow. If it’s early Wednesday morning, and you’re getting ready to hit the gym: mix the ingredients for a banana chocolate smoothie in your blender, which provides the right amount of protein you need to repair your muscles after lifting weights. If it’s Saturday night—date night—and you’re eager to impress, follow Churchill’s directions for baking a shortbread cookie topped with delicious chocolate ganache.

Packed with helpful tips and shortcuts, as well as beautiful photographs, this book will turn any dude into a cook.
